Walnut Rum Balls


This is part of Domestic Witch's Christmas Balls Collection



Walnut Rum Balls

¼ cup liquid honey (I like alfalfa best for baking)
1 tsp pure vanilla
¼ cup butter

½ teaspoon baking soda
½ tsp baking powder
½ cup gluten free flour mix

1 cup oatmeal (processed in a gluten free facility)
1 Tbsp Spiced Rum
½ cup finely chopped walnuts

Preheat oven to 350°
Blend honey, butter, and vanilla together
Add flour, baking soda, and baking powder
Add oats, walnuts and rum
Roll into small balls (about the size of a big marble – a concker)
Bake on cookie sheet for +/- 10 minutes
Store in an air tight container; they get better if they sit for a few days, the rum has a chance to infuse the whole cookie.

Obviously, if you have no celiacs on your baking list, you can use regular flour.
I keep meaning to experiment with a chocolate version, but haven’t done it yet.
